first day, a thank you!

So for a short introduction, I’m Jessie Scarola. I have been working for a little over six months getting a gluten free business, Elegant Elephant Baking Co., together. Today was the first day of production! Very exciting stuff. As it turns out it is not the same baking in a brand new state of the art commercial kitchen as in say, my kitchen.

 

Little did i know…..

 

Let me pass on some very valuable knowledge to other amateur bakers out there: a convection oven is your best friend. however it may take 4 dozen burnt cookies to feel like you know each other. okay maybe it was 6 dozen.
